All spirits begin with a plant.

Before alcohol, before process, before branding — there is botany: grain, fruit, root, seed, bark. Distillation is not creation; it is capture and composition.

At Nola’s Farm, our spirits combine traditional distilling principles with modern scientific understanding. Crafted in our bespoke glass stills, we observe closely and refine each stage with intent. We use a combination of traditional and vacuum distillation to capture delicate aromatics — especially native citrus — and we proof with pure water over time to allow the molecular structure of spirit and water to integrate, creating softness and balance.

We intervene carefully, allowing plants to express themselves rather than forcing uniformity. Every recipe is developed in-house. Every process has a reason.

There is a quiet alchemy in what we do — not mysticism, but transformation guided by knowledge, timing and restraint.

Signature Gin

Our Signature Gin is a study in botanical composition.

Juniper, angelica root, coriander seed and liquorice root are distilled with gentle heat alongside Australian natives — Desert, Red Centre and Sunrise Limes, Quandong, Saltbush, Red karkalla and Desert Wattleseed. Together, they create structure, depth and balance: resinous juniper, warm spice, subtle savoury notes and bright native citrus woven through the spirit.

To preserve the most delicate aromatics of the native limes, we then undertake a second distillation under vacuum at low temperature. This captures their lifted citrus oils and fine perfume — elements that would otherwise soften under heat.

By interweaving traditional hot distillation with cold vacuum distillation, we separate, refine and recombine the botanical aromatics with intention.

The result is a gin of layered botanical expression — depth, brightness and savoury nuance unfolding in succession.

Signature Vodka

Where our is Signature Gin is botanical architecture, our Signature Vodka is technical purity.

Our Vodka begins with sun-grown Australian wheat — nothing more.

Distilled three times for clarity and refinement, it is then subjected to bespoke cold vacuum filtration, a technique designed to further purify while preserving texture and composure. No botanicals are added; the character comes entirely from grain, fermentation and disciplined distillation.

Proofing is undertaken over time with pure water, allowing spirit and water to integrate gradually. This measured approach enhances softness, structure and mouthfeel.

The result is exceptionally clean, smooth and elegant — a vodka defined not by neutrality, but by precision.
